Maricopans thirsting for a new drinking and dining option will have to wait a little longer for Cold Beers & Cheeseburgers, a much-anticipated sit-down restaurant.

Tracy Frazier, chief operating officer of Square One Concepts, parent company of the Scottsdale-based chain. said the restaurant now is scheduled to open in the spring of next year. No exact date is yet set, he said.

Buildout delays, which initially pushed the opening to November, have now forced that timeline to be extended again, according to Frazier.

The restaurant, which will sit immediately north of Sprouts Farmer’s Market in Sonoran Creek Marketplace, at 20350 N. John Wayne Pkwy., Suite 160, initially was slated to open this summer.

The Maricopa restaurant will be the chain’s 14th in Arizona. The company has created a niche with its expansive selection of draft beers and gourmet burgers since its founding in north Scottsdale in 2011.

Frazier said the restaurant will reflect specific needs of Maricopa.

“Maricopa is a growing community with a sophisticated population that seeks quality restaurants with great food, and there are not many options nearby,” he said. “We are confident that our scratch kitchen, recipes created by Chef Robert Wagner, a fantastic selection of beers all together mixed with our welcoming and relaxing environment will make Cold Beers & Cheeseburgers a go-to for Maricopa residents for years to come. We always strive to be your neighborhood burger joint. That slogan is very real for us.”

Frazier said he expects the restaurant to hire 60 to 70 full-time and part-time employees.

“We anticipate interviews to begin at the beginning of the year,” he said. “Interested candidates should follow us on our social-media platforms to keep up to date.”

The Maricopa restaurant will feature more than 150 beers and have the largest bar of all its locations in Arizona, stretching more than 50 feet. There will be plenty of room to spread out — site will span 5,475 square feet.

Interior amenities will include the chain’s signature plush leather booths, 50 HD flat screen TVs showing sports and a state-of-the-art sound system.

Construction is well underway at the site.

“Keep an eye out for our large outdoor patio to be built out in the near future,” Frazier said. “The patio will encompass almost 2,000 sq feet, which will be a great complement to the space.”

The patio will accommodate about 100 patrons, have misters and be available for private events.
