County dining inspections for February

Out of the 13 Maricopa food establishments inspected by the Pinal County Environment Health Department in February, three received a grade lower than excellent.

The department can issue violations that are either critical or non-critical. Critical violations must be fixed within 10 days and affect a location’s score. Non-critical violations must be fixed within 90 days. Grades are based on the number of violations with an E, for excellent, being the highest possible score an establishment can receive. Other scores are an S for satisfactory, U for unacceptable and an N for needs improvement.

Employee’s hands and exposed arms not clean and properly washed.
Observed slicer and shredder with old food product. Shredder had old sticky residue indicating a lack of proper cleaning in some time. Educated PIC on proper cleaning of equipment.
Nut containers left uncovered overnight. Observed containers of breaded chicken or pork left on the walk-in floor. Instructed PIC to keep all food products up off the floor. The floor was observed dirty.
Observed pooled eggs left overnight for reuse. When pooling raw eggs they must be used immediately or at least within 4 hrs. Eggs discarded upon request.
Ready-to-eat potentially hazardous foods are not correctly date marked.
The management has not taken appropriate steps to minimize the presence of rodents/insects in their facility. Observed two large adult roaches crawling on a vacuumed sealed raw meat package that was placed in the food prep sink. Also a nymph (baby ) roach was crawling on the backboard just above the sink
No fresh sanitizer available to wipe down food prep areas before starting food prep activities.
