Vekol Market unveils latest million-dollar upgrade

The Ak-Chin Indian Community’s Vekol Market on Farrell Road west of State Route 347 is hosting a re-grand opening Thursday to show off its latest improvements.

The original Vekol Market underwent a $3.2 million renovation in April 2012, according to manager Norm Potter.

The initial renovation included a fresh-market grill, farmer’s market and a café complete with a TV and Wi-Fi access.

Two years later, the Ak-Chin Indian Community is investing an additional $1.7 million for a new fueling station, redesigned café and kitchen area, Potter said. The café will feature a new menu, too.

“Now you can buy fresh pastas made from scratch, as well as Asian stir frys, fresh burgers grilled to order and many other menu items,” Potter said.

The market is expanding to offer catering services.

“The redesign of our café and restaurant will decrease the cooking time for menu items and is allowing us to offer a much more varied menu of fresh food options,” Potter said.

The re-grand opening event is from 9 a.m. to 2 p.m. and features door prizes and take-home items for guests.
