A local food truck favorite is about to evolve.

The owners of popular food truck Asian Seoul announced Thursday they will open a permanent location in an empty storefront on John Wayne Parkway.

“Our menu and what we want to offer our customers has outgrown what we are able to carry on our food truck,” owner Charlotte Stessel said in a statement.

The restaurant will occupy the old Dickey’s Barbecue Pit next to EarthWise Pet Supply and East Valley Cardiology.

According to the statement, the new restaurant plans to open in a few months after the space is remodeled and decorated.

Asian Seoul began serving Maricopans in 2019 and specializes in Asian fusion cuisine. Popular menu items include bulgogi fries and panko-topped mac and cheese.
