Customers push Tacos N More into expansion

When Mercy and Joe Vasquez moved their Mexican restaurant to North John Wayne Parkway from the south of the railroad tracks last year, they hoped business would improve but didn’t expect it to improve so much or so quickly.

Exactly a year after re-opening the restaurant, the couple has added 60 seats.

“I didn’t think we’d need it so fast,” said Mercy Vasquez. “Business is just turning out really well.”

The additional seats give the light, airy restaurant a total of 110 seats, mixed between booths and chairs.

“The customers just kept requesting it,” Vasquez said. “We’ve been working (on the expansion) for a couple of months now.”

Vasquez attributed her restaurants’ success to “the quality of our food and the quality of our service.”

“We have a good lunch crowd,” she said.

So far, customers have given the couple “positive, positive reaction.”
